Honey and cider vinegar work well with roasted vegetables and salad leaves. A homemade dressing will keep in the fridge for up to a week so can be made in advance. Cider vinegar has a lovely sharp flavour which blends well with the caramel taste of Jarrah honey.
75ml apple cider vinegar
75ml extra virgin olive oil
S + P
Place all ingredients in a screw top jar and shake well. Adjust seasoning to taste.
