This is a lovely sauce for cooking gammon steaks or eating with left over ham. It also goes well with chicken thighs baked in the oven and served with new potatoes and green beans.

Ingredients
4 Gammon steaks
- 4 tablespoons of honey – the creamy toffee flavour of York Gum is perfect for this recipe
- 2 tablespoons of Dijon mustard
- 1 tablespoon of olive oil
- 1 tablespoon lemon juice
Freshly ground black pepper
A pinch of salt if you are cooking chicken
Preheat the oven to 180C/350F/Gas 4
Method
Place the ingredients for the sauce in a bowl and whisk together to combine. Season with a few twists of black pepper.
Pour the mixture into a gratin dish or small roasting tin.
Add the gammon slices and cover with the sauce.
Bake in the oven for approx. 30 minutes turning half way through.
To serve
Pour the sauce over the gammon for extra flavour.
